Triple Chocolate Peanut Butter Cookie Dough Sandwich Cookies

       So my good friends/Delectably Different Kitchen teammates have been begging me to make something just for them…something so delectable, so indulgent that you wouldn’t want to have to share even a single bite with someone else! So being the good, fun, supportive friend that I am (right???), to the kitchen I went to supply this requested dessert. What did I come up with? A delicious, egg-free peanut butter cookie dough, sandwiched between two dark chocolate cookies, which happened to be stuffed full of milk and white chocolate chips.

(I may also have been a little afraid that if I didn’t give into these demands. my blog could possibly be taken over by my so-called teamies. They have access to all that stuff so I better keep them happy.)  😉

 

You’ll need…

Cookies:

2 cups flour

1/4 cup dark cocoa powder

1 tsp baking soda

1 tsp salt

1 cup Salted Kerrygold Butter, softened

3/4 cup organic sugar

3/4 cup organic brown sugar

1 tsp organic vanilla

3 organic free-range eggs

1 cup milk chocolate chips

1 cup white chocolate chips

 

Preheat your oven to 375°F and prepare two large cookie sheets by greasing or lining with parchment paper.

In a small bowl, combine flour, cocoa, baking soda, and salt. Set aside until needed.

In another bowl, cream together butter, sugars, and vanilla extract. Next, whip in the eggs one at a time, being sure to mix the dough well between each addition. Now, in three separate portions, mix the dry ingredients into the creamed ingredients. Finally, mix in the chocolate chips.

Roll the dough into generously sized balls, then place the cookie dough balls onto the prepared cookie sheets, leaving about one to two inch gap between each of them.

Bake the cookies for about 10 minutes. Check occasionally to make sure they aren’t over baking. Once you have baked the cookies for allotted time, take them out of the oven and allow them to set for about three minutes before transferring to another cookie sheet. Place them in the fridge cool completely.

Peanut Butter Cookie Dough:

1/2 cup creamy peanut butter

1/4 cup Salted Kerrygold Butter, softened

1/2 cup organic brown sugar

3/4 cup white flour

1 tsp salt

1 tsp organic vanilla

heavy cream, as needed

 

In a bowl, cream together the peanut butter, butter, and sugar. Next, whip in the flour, salt, and vanilla. Finally, add in enough cream to achieve the consistency you would like for your cookie dough.

Spread the cookie dough over the bottom of one of the cooled cookies. Place a second cookie, flat side down, on top of the prepared cookie, then gently press them together. Repeat this process until you’ve used up all the cookies and cookie dough. All you need to do now is pour some milk and enjoy these delicious Triple Chocolate Peanut Butter Cookie Dough Sandwich Cookies!

 

P.S.  My plan worked! These cookies were a huge hit with my crew so we should be good to go for awhile.
