S’mores Scones

Gluten-Free!

 

A bonfire, campfire, and well, pretty much any type of fire brings back the nostalgia of a delicious and comforting s’more! I mean, how can you go wrong with the crunchy graham cracker, smooth delicious chocolate, and gooey marshmallow melted on top? So today I’m putting the campfire aside while I bake up a s’mores scone inspired by these delectable flavors.

 

 

What you’ll need…

2/3 cup sugar

4 cups Bob’s Red Mill Gluten-Free Flour

1/2 tsp xanthan gum

4 tsp baking powder

1 tsp salt

2 tbsp vanilla extract

3/4 cup Kerrygold Salted Butter, cubed

1 cup chopped marshmallows

1/2 cup chocolate chips

1 cup buttermilk

2 eggs

12oz chocolate chips

 

Preheat oven to 420°F.  Prepare a cookie sheet by lightly greasing or lining with parchment paper.

 

In a mixing bowl, combine sugar, flour, baking powder, and salt.  Mix well.  Cut in butter until fully combined and the mixture is crumbly.

 

Add in marshmallows, chocolate chips, milk, and egg. Mix thoroughly until batter is moist and slightly tacky. When adding in the marshmallows, I find lightly rolling them in some flour before placing them in the bowl will help to disperse them more evenly throughout the batter. Otherwise, you could end up with a giant mass of marshmallows.  Not that a giant mass of marshmallows wouldn’t be awesome, but we want to share the love with all the scones.

 

Drop spoonfuls of batter onto prepared cookie sheet. Bake for 10-13 minutes or until the tops are a beautiful golden brown.

 

Note: because you are baking marshmallows on a cookie sheet, it could lead to a light burning on the parchment paper and even some burning on the bottom of the scones. Don’t freak out, we have a solution for this, and also don’t worry about your scones having a burnt taste. I actually had several people say it had the perfect campfire S’Mores taste from being toasted!

 

Transfer onto a cooling rack and allow to cool slightly before serving. After the scones have completely cooled, melt one 12oz bag of dark chocolate chips, Then proceed to spread the melted chocolate onto the bottoms of the scones. This will help cover up any unintentional browning, plus this will just add that extra touch of s’mores deliciousness!

 

Place the scones back on to the cooling rack, face down, then put in the fridge to allow the chocolate to harden. After the chocolate has set, transfer to a plate to serve, and drizzle some remaining chocolate on top and add a marshmallow to garnish your s’mores scones!
