Gluten Free Old-Fashioned Chocolate & Vanilla Whoopie Pies

Sometimes there’s nothing like the classics…and that is just what I’m bringing you today, with a recipe for Whoopie Pies. I hope you enjoy this tried-and-true combo of chocolate and vanilla, in the form of what could be described as a giant, soft, Oreo cookie!  Yes, please.

 

You’ll need:

 

2 cups Bob’s Red Mill 1 to 1 Gluten-Free Flour

1/2 cup  dark cocoa

2 tsp baking soda

1 tsp baking powder

1 tsp xanthan gum

1 tsp salt

1 cup brown sugar

1 large egg

1/2 cup Kerrygold Salted Butter, softened

1 cup buttermilk

1 tbsp vanilla extract

 

Preheat the oven to 350°F.  Prepare two cookie sheets by lining with parchment paper.

 

In a medium bowl, combine the flour, cocoa, baking soda, baking powder, xanthan gum, and salt.

In a separate bowl, cream together the sugar and butter. Once they are fully combined, whip in the egg followed by the vanilla extract.

 

Alternating with the buttermilk, begin to whip the flour mixture into the cream mixture. Be sure to end with an addition of the flour.

 

Scrape down the sides of the bowl and stir in any stray ingredients. Next, scoop a generous amount of dough on to the prepare cookie sheets. You should end up having around 18 cookies which will provide you with nine Whoopie Pies.

Place the cookies in the oven and bake for 12 – 15 minutes, or until the cookies have raised and bounce back when you touch them. Once they have finished baking, transfer to a cooling rack to cool completely.

Fluffy Cream Cheese Filling

 

1/2 cup Kerrygold Unsalted Butter

8oz  block cream cheese

2 cup powdered sugar

1 tsp vanilla extract

1/2 cup heavy whipping cream

 

In a medium bowl with an electric mixer, whip together the butter and cream cheese until completely combined. Beat in one cup of powdered sugar followed by vanilla extract and salt. Then, whip in final cup of powdered sugar.

 

In a separate bowl, beat the heavy cream on high until stiff peaks form.

 

With a spatula, gently fold the whipped cream into the butter cream until the filling is light and fluffy.

 

Once the cookies have fully cooled, you can begin to assemble them. To do this, all you need to do is place a generous amount of filling the bottom of one cookie. Place a second cookie on the top of the filling and give it a gentle squeeze. Now all you have to do is repeat the process, then serve and enjoy!

    Chocolate Cookie

  7. Repeat the process for all cookies.
  8. Serve and enjoy!
